The Prediction of Red Wine Quality on the
Basis of the Correlation Between the Saccharides and the Anthocians Content from Grapes


Abstract:

In this paper is proposed a method used to predict the qualitz of a red wine based on the correlation between the saccharates and anttrocyans contents in grapes from which the wine is obtained. For this purpose it was determined the anttrocyans content from black grapes of three varieties: Cabernet-Sauvignon, Merlot and Novac, and data was analysed in relation with the ones concerning the saccharates concentration of the samme grapes. The study was made during 1996-2000 in the wine chemistry lab of the Station for Wine Research and Development of Drăgăşani, Vâlcea. This method may provide information concerning wine categories wih original ,..... which many be produced in different crop years. Keywords: red wine, saccharates, anthocyans, grapes
